Yummy tartine with Ricotta & Grilled Aubergine

Ricotta is Tunisia’s national cheese. It’s delicious as a breakfast tartine with honey, briks, or tartes… It’s the cheese from the local cheese-maker that you can find in every Tunisian refrigerator. Fresh herbs, such as fresh dill, are a common sight in Tunisian gardens.
INGREDIENTS
- 1 boiled egg
- 1 grilled aubergine
- 4 Kalamata olives
- a sprig of dill
- slice of bread
METHOD
- Slice the aubergine and roast it for 20 minutes on grill mode in the oven until it is tender.
- Boil the egg (8 minutes), then peel it and divide it into four slices.
- Spread the ricotta on the bread.
- Add the aubergine that has been grilled, the olives, the sliced eggs and toss in the dill.
Finally, sprinkle sesame seeds on top.
